Quito's Quesdilla's has it's origins Puebla Mexico. The company was founded in 1996 by Estaban Ruiz and wife Celeste. The first quesadilla was sold out of the small family store which offered various Mexican specialties. The best selling items were the legendary quesadilla's. In a neighboring town a small quesadilla stand was started and from there the business exploded. Quito's Quesdillas now has 19 locations throughout Mexico and New England.
